I grew up with a grandmother who would make Scotcharoo bars on a regular basis. She always used Rice Krispies for the cereal, but you can use Rice Chex, Wheat Chex, or any other crunchy cereal of your choice.
Ingredients
- 1 cup sugar
- 1 cup light corn syrup
- 1 1/2 cup peanut butter
- 6 cups crispy wheat or rice cereal
- 1 6oz bag of butterscotch morsels
- 1 6oz bag of semi-sweet chocolate chips
Procedure for Making Baby Nathan Bars:
The procedure for making Scotcharoos is a simple process of mixing the syrup, sugar, and peanut butter and combining it with the cereal.
- Preheat oven to 350 degrees.
- In a saucepan over low heat, heat sugar, corn syrup and peanut butter to a smooth consistency, stirring constantly to avoid burning.
- Pour hot mixture over cereal in a bowl and mix well.
- Pat into a greased 9-by 13-inch baking dish. Sprinkle butterscotch morsels and chocolate chips over top. Bake until the butterscotch and chocolate melts and spreads over cereal mixture. Cool and cut into squares.
Are Scotcharoos gluten free?
Depending on which type of cereal you use in your bars, it’s fairly simple to make gluten free Scotcharoo bars. Corn syrups like Karo and Walmart’s Great Value are gluten free. Most peanut butter should be gluten free unless the brand uses some kind of additive, so be sure to check the label. Both chocolate chips and butterscotch chips should be gluten free. For the cereal, use Rice Chex or the Always Organic Crispy Rice cereal. It’s important to note that Rice Krispies are not gluten free. As with any food product, be sure to check the labels and be aware of your own specific health requirements.
